Gottta get dat omega three!
- 1 cup of brown rice
- 1 large egg
- Some mushrooms (sliced into smaller pieces)
- Chopped spring onion (I used a red onion which worked fine too. Onions don’t keep very well in the fridge, however, so it is a little wasteful to use a larger one as the part you don’t use will oxidise.)
- Some smoked salmon
- 2/3 tsps curry powder
- 2 tbsps peas
Wash and cook your rice for about 15 minutes.
When the rice is cooked, refresh it in cold water and leave it to one side.
Heat up a little bit of oil in a skillet and cook the onions and mushrooms until the onions are soft, adding the peas just when that happens. Be careful not to burn the onions.
Put the rice, and curry powder in the skillet and fry for a few minutes before adding the egg and turning off the heat.
Throw in the salmon, mix it all up, serve and eat!
